January Favorites Link up

First I'm happy that I look forward to Mondays now for only one reason. Bachelor!!! I watch every season and this Bachelor is easy on the eyes!! 


Found these in my grocery store and tried them, love them! They have peach, strawberry and mixed berry. I love the peach and strawberry. I want to try the mixed berry next. I am not a big yogurt fan but I can kill these! 


Yoga pants. I get home from work and jump into my comfy pants. I bought 3 new pairs this month and live in them!! I did buy them in hopes to excercise more...I'm working on that...baby steps! 


My monthly menu. This was the first month trying this out and it was fabulous! I plan on doing a post about it later but I love how I didn't have to think of what's for dinner?!!

Bachelor Monday!

I admit, I LOVE the Bachelor and Bachelorette. I have watched from the very first season. Last few seasons you would find me rolling my eyes from all the drama, but I Love it!! I am thinking of doing a Bachelor Monday!

The current season has another reject hottie of the Bachelorette. Sean Lowe. He is so easy on the eyes so I'm not complaining one bit. He also is a very genuine, caring, christian guy....One you would love to take home to mommy!

Now I pick my favorites every time. Most often the ones I like, they make it all the way to the end or at least the last four. Sean's season my favorites are Desi, Lesley, Lindsay, and AshLee. I wasn't sure about AshLee until their one on one date. She seems really sweet and Sean seems to be into her. Lindsay seems like she knows how to have fun. She's spontaneous too. The weeding dress intro was a bit much tho but shows her fun side.
I loved that Kacie B came back to win Sean's heart but wasn't really sad to see her leave. She's better than this. She should sit back and chill... find out who she is. Love will find her. She was my fav on Ben's season!! ;)



So, tonight...I will be parked out on the couch under my favorite soft blanket watching my Favorite show!!

Skinny Chicken Broccoli Casserole

Need a quick and easy meal that is also good for you? This meal is it!

Mondays are a tiny bit hectic. You know back to school and work for me after the weekends and Alexis has dance. So all homework needs to be done and dinner fixed and eaten before dance.
So I try to find quick and easy meals for our Mondays. I've made this before and the whole family likes it. And it only has 310 calories per serving! Click Here for the recipe and directions.

Ingredients: 
1lb Chicken cut up and cooked in skillet
2 Tbl light mayo
1 can cream of mushroom soup
1/2 shredded cheddar cheese
1 bag frozen broccoli
1/4 cup crushed crackers for top


Directions: 

Cut your chicken in bite size pieces. Cook your chicken in a skillet until no longer pink. 
In a baking dish, mix the mayo and cream of mushroom soup. Add cheddar cheese, mix well. Add frozen broccoli and then chicken. Top with crushed crackers. 





Bake at 350 for 20-25 minutes. Really good served over rice.

Strawberry Gooey Butter Cookies, Yes Please


Oh my just the name makes me drool. Strawberry. Gooey. Butter. Cookies. YUMMY!!! I follow Cookie and Cups blog and have found a lot of yummy recipes there. This one of course caught my eye. Since I was a little girl, I've always loved strawberries. They are so delicious and good for you too!! :)

So when this blog post showed up in my email feed, I couldn't wait to get to the store and grab some strawberry cake mix and cream cheese. I had the other three ingredients, yep that's right... only five ingredients! 

I grab my beautiful Kitchen Aid mixer. I love this mixer even more than what it can do. I got this beauty for Mother's Day years ago. What makes it special is I got it for only $50. A steal! :) I know these babies are going for $200+ in the stores. 
I found it on a mommy's group I belonged to and she was selling it. I jumped on it and was happy I was the first one to reply to her. Yay * happy dance* also I was happy it was RED. I wanted a kitchen with red accents for a long while.

French Bread Pizza

Easy quick pizza bread.
I was hungry for lunch and didn't want another sandwich or bad for you fast food.
I remember I saw a french bread pizza pin on Pinterest.
I had most of the ingredients at home so I stopped by the store and picked some up bread and mozzarella cheese.
Best thing is you can add any topping you prefer. I usually like black olives, onions, mushrooms, pepperoni, and of course cheese!




Preheat oven 400 degrees. 
First you will need to cut your bread in half. 



Next add your pizza sauce. I have been using Classico pizza sauce. I also use the Classico spaghetti sauce for pasta dishes. It has mostly natural ingredients so it's better for us when I don't have time to make my own.



Now add your favorite toppings.




Before going in the oven


Bake at 400 until cheese is melted, approx 10mins or so.




Yum Dig in!

Breakfast Cookies

These are a healthy breakfast cookie.
Packed with bananas and oatmeal, turned out pretty good!

Ingredients: 

1 1/2 cup Oatmeal
1 cup unsweetened applesauce
2-3 ripe bananas
Cinnamon to taste
Handful of Craisins








Throw everything into a mixing bowl




Mix until combined





Drop on baking sheet. Bake at 350 for 35 minutes. 


Enjoy!!

Motivation

Motivation. Noun:
The general desire or willingness of someone to do something.





I have not had motivation in quite some time. I don't know where it went. I haven't been able to get outside due to it being cold and wet this winter so far. Being lazy is another reason. The only excuse I have is I make excuse after excuse.



Well enough of the excuses.... I do not like what I see in the mirror. I have gained weight, I'm so out of shape and I do. not. like. it. at. ALL!!! So I need to get my rear in gear and find that Motivation...fast!! Bathing suit season is fast approaching and the beach is one of my Favorite places to go!! Summer is my Favorite season hands down!!! 



I've been eyeing this certain bikini that I want to rock this summer!!

I found some motivational pins on Pinterest.  I found a few quickie workouts so I would have no excuse not to find the time to do them!! The one below is a 10 minute workout. This bod itself is enough motivation for me!!! 
Now I know I will never look like this especially after having kids and that's not really my goal. But I do want to get back in shape. 





I also will try to kick my Cheerwine habit and drink more water!

Pinterest does it again.



If you know me, you know I Love Pinterest. That is my go to for what to eat tonight. This week we had meatloaf muffins. Recipe here. A bit hit for the whole family. A big plus is that it had diced up carrots in them.... adding veggies any way I can is awesome! You couldn't even taste them if you aren't a carrot fan.  I like the idea of meatloaf as muffins, helps with portion control, and also they are fun for the kids to eat!  Here is the finished product with homemade mashed potatoes and peas for sides. 



Well last night we had Chicken Enchiladas. I haven't made enchiladas in a quite some time, mainly because of the kiddos. They are basically tacos eaters but as they get older they are trying more and more variety of foods. Yay for mom!! This recipe caught my eye, recipe here.  It has cream cheese and sour cream in the ingredients....yum!! This has to be good I thought. Well it was ....ok! The kiddos didn't cared too much for them. *sad face* I think it was the texture of the shredded chicken my daughter didn't like. Oh well. Ya win some ya loose some! 

I did remember to take some pictures while fixing this...half way through! I should remember to take pictures more often so I could maybe do some step by steps! 
Anyways...






Ingredients all mixed together.

Enchiladas sauce on bottom of creased 9x13 pan. Start filling and rolling your tortillas with chicken mixture. Seam side down in pan. 
Add more cheese and rest of scallions. Never enough cheese right! Baked at 325 for 20-25 minutes. 
Yummy Deliciousness! 















Throwback Thursday

We are expecting a little snow tonight. The kids are excited as I am too!! We didn't have any snow last year so it will be nice to see some white tomorrow. These were taken a few years back, 2009 I think.
